[Course] [MasterClass] Intentional Eating - Michael Pollan


I followed the Masterclass Course  - Intentional Eating - Michael Pollan and I thought it to be interesting. It's almost a podcast, but there are videos intertwined with him speaking and some field trips.

Disclaimer! please consult your phisician before you undertake any major changes to your diet. 

Lesson #1 - to eat intentionally, sitting at the table, enjoying the richness of your meal, the aspect, the colors, the smell, appreciating the work of the people who helped bring this to your table ( so no unhealthy snaks mindlesly watching TV or standing)

Lesson #2 - eat healthy, not too much, mostly vegetables, less meat

CLASS

1. Meet the Instructor Michael Pollan is an American journalist who is a professor and the first Lewis K. Chan Arts Lecturer at Harvard University. Pollan is best known for his books that explore the socio-cultural impacts of food, such as The Botany of Desire and The Omnivore's Dilemma.(via wikipedia)


Don't eat in ignorance. Know your food and food sources. In this class you will learn some rules of sustainable eating, for long term health.

2. Rethink your relationship with food. Your values impact your eating choices. Every time we eat we make a statement about our eating values. Align your eating choices with your values. 

Values: Community. Sustainability. Animal Welfair. Pleasure. Social Justice (right compensation of workers in food industry). Health. Sustainability. Ethics. Enjoyment. Connection. Comfort. Convenience. Accessibility. Rank them according to what matters most to you, and what matters least.

Rethink your values from time to time, are you valuing what's really important?

Assignment: Get in contact with nature, with food. Plant some microgreen seeds. You will gain confidence that you can plant some seeds and that the plant will grow and you can use them in your meal after they grow.

3. Confront barriers to intentional eating. Eating well shouldn't be elitst.  The organic food is more expensive, it's more expensive meat from grass fed animals, but there are solutions. Quality vs quantity? A small quantity of a high quality product or large quantity of not so high quality product? Organic is not necessarily the first choice, fresh fruits and vegetables are. Home cooking is the cheapest method. Cook in large quantities and put the excess in the freezer. Go to farmer's market instead of the supermarket. Buying from local markets is more sustainable, food doesn't have to travel long distances to reach you, it's fresher and with less conservants. Eat seasonal legumes and fruits. Look for local food associations. Subscribe to a farm and order vegetables on weekly basis.

"The votes" you give concerning food matter. Act like a citizen not just a consumer.

Assignment 3.1: keep record of how much money you spend on food, snacks and the rest.

Assignment 3.2: find local food associations, farms, grocery stores that sell local produce.

Assignment 3.3. Share your experience with your circle of friends. Did you visit a farm? Did you cook for your friends? What are your achievements?

4. Discover where your food comes from. You can't eat well if you don't know where your food comes from. For instance, there are 2 potatoes, they maybe look the same, taste almost the same, but one is full of pesticides. You can find organic label in the supermarket but that's not all, sometimes there are deceiptive labels, "farm grown", "natural". Food categories: industrial, industrial organic, regenerative / local farmer's market. Pick organic non-labeled produce from local farms, that are maybe not certified organic but don't use pesticides versus large industrial organic. There are a few produce high in pesticides, these you should try to buy organic: strawberries, peaches, pears, nectarines, apples, grapes, cherries; tomatoes, bell peppers, spinach, celery, greens.

Assignment 4.1. Visit a farm. Ask questions, how they deal with weeds, pests, fertility of the soil.

5. Field trip Visiting a farm, City Slicker Farm. Mixing vegetables grown on a land, they are stronger and face pests better. Mixed cultures.

6. Explore the present and future of meat

7. Follow food rules not diets Stay away from diets. The changes in diets are not sustainable on long term. No fat, low carbs, keto, there are many kinds of diets. Eat a healthy diet, not so much processed foods, make small lifestyle changes not diets. If a new study appears, ask how the data was collected, think how hard it is to get accurate data about eating habits. Food rules, policies that make choosing what to eat, easier. Some food rules:]

  • Eat what your grandma would recognise as food. The whiter the bread, the sooner you'll be dead. 
  • Eat only what has been cooked by humans.
  • Eat when you're hungry, not when you're bored or in the mood for snaks.
  • Eat food, not too much, mostly plants.

Come up with your own rules and even make posters with these rules.

8. Eat food, Ultraprocessed foods contain many ingredients, you can't imagine how to make that at home.(you don't have the ingredients and you don't know where to buy them). Ultraprocessed food is not healthy for you, it will make you eat more, it's hard to stop at the point of satiation. Ultraprocessed food is not attacked by microbes as much as whole food, in 30 days a cookie looked very well while some slices of potatoes were attacked by molds. You don't need preservatives & aditives for your health. If it has ingredients that a 10 years old child can't read, it's not recomended. 

Assignment 8.1. Read labels when going to the supermarket, see what whole foods were transformed by adding many additives & preservatives.

Assignment 8.2 Identify in the supermarket products that make health claims, but are actually ultraprocessed foods. Containg a healthy nutrient doesn't mean it's healthy.

10. Eat mostly plants

11. Balance coffeine and sugar consumption

12. Stir up a passion for cooking

13. Celebrate the communal meal
